Brick Street Chocolate Cake Recipe

Saw this wonderful cake recipe looks pretty interesting, if you’re a chocolate lover give it a try…

~ Ingredients ~

• 2 c. sugar

• 1 c. butter, softened

• 1-½tsp. vanilla extract

• 3 eggs (room temperature)

• 2-½ c. cake flour

• 1 c. cocoa

• 2 tsp. baking soda

• ½ tsp. salt (if using unsalted butter)

• ½ c. instant chocolate pudding

• 2-¼ c. buttermilk

• 1 c. semi-sweet chocolate chips

  1. Combine dry ingredients in a bowl. Set aside.
  2. Beat sugar, butter and vanilla until light and fluffy
  3. Mix in dry ingredients, alternating with buttermilk. Contiune mixing until batter is smooth
  4. Stir in chocolate chips
  5. Pour batter into a greased 10-inch tube pan
  6. Bake at 350° for 30 minutes then adjust temperature down to 325° and continue baking 30-40 minutes more until cake tester comes out clean
  7. Cool cake in pan for 10 minutes before removing to serving plate. (This cake is served upside down)
  8. Cool cake completely before icing

~ Icing ~

• ½ c. water

• ½ c. butter

• 1 tsp. vanilla

• 1 c. cocoa, sifted

• 3-½ c. powdered sugar, sifted

• 3 Tbs. heavy cream

  1. Heat water, butter and vanilla in a saucepan until melted
  2. Remove from heat
  3. Stir in cocoa and sifted sugar
  4. Stir in heavy cream (or more) until desired consistency
  5. Ice cake by filling in the hole in the middle first, then spread icing over cake top and pour over the side. Icing will harden as it cools
